I create an issue type for managing deployments to production, and I would like to reuse the time tracking field used in "log work" to indicate the estimated duration of the release.
I can't find in "custom fields" such a field type.
Do you know how can I do that?

Maxime, there's no custom field of that type - at least in the standard JIRA. Original estimate, current estimate and time worked are the built-in issue fields.
So if you have an issue type called "Release" and you'd like to use the estimates to store the duration of the release - you can well do that, just use Edit Issue and set the estimate. You can also log work on that release, whatever that means.
If you do need a custom field, you could use a Numeric custom fields that would store, say, number of days.
