For Demo's we often make changes to the jira project during the demo, to things like story points, sprints, descriptions etc. So after awhile the demo project becomes a mess.
Is there a way to revert the demo project back to its original state that is not overly complicated (customer facing team can do it?). automatically deleting all issues and replacing them would be fine with me as well if restoring is way harder.
- maybe there is an app in the marketplace?
- script and do it via api

Welcome to the Community and hope this finds you well.
Since it looks like your on cloud there is a few ways to do this.I will outline 3 different possible paths to go.
1. If you create a template project for your demo you can use Automation for Jira to reset up your project by deleting all issues and have the issue template back to initial set up. You will have to set up each issue and make a query statement to delete all other issue but this is a one way you can achieve this.
2. The other way you could do this is set a time schedule event to delete all issues and then you could use DeepClone (Market place add-on) with a template of issue and have it clone the data back for you.
3. The next way you could do this is to use @Vish Reddy {Revyz} Revyz add-on to take back ups and keep a specific backup for the template and just remove the demo and add it back to its backup state.

How about instead of going through the trouble of reverting demo data, you set up one template demo project and use that as source for temporary new demo projects that you can delete after.
While Jira native does only offer to create new projects with shared schemes, you'll probably need a more advanced solution to clone your demo project.

Depending on the complexity of your template, you might even set it up completely inside the app with predefined elements to avoid having a template project sitting around.
