Why does Scrum Board only show Unresolved issues?
The filter doesn't filter them out. Somehow Scrum Boards implicitly skips them. Is that normal?
We're using GreenHopper 6.0.8 with JIRA 5.1.8.

The board uses pretty simple criteria to decide what gets displayed. First it selects all issues that match then filter then:
Resolved issues will definitely display in plan mode if you removed the resolved status from the last column.

I have an issue that was visible on the (Scrum) agile board in both Plan mode and Work mode until the engineer resolved it. After he resolved it, it makes sense that I would no longer see the issue in Plan mode, based on the criteria you describe. However, I expected to see it in Work mode (in the "Done" column), but instead it has disappeared from the board entirely.
When I open the issue, I see the (still Active) sprint name as expected in the 'Aglile' area of the issue screen, but when I click on the link to 'View on Board' I get an error message: "There are no boards which contain this issue." If this link exclusively goes to the issue in 'Plan' mode, then that explains the error (although this should be fixed). But it still doesn't explain why I don't see the issue in Work mode for the active sprint.
The engineer resolved the issue via the regular workflow, rather than by dragging it into the 'Done' column on the agile board, but I don't think this should make a difference.

Updating my comment above to state that I'm having this problem with all issues within an active sprint. They disappear from the sprint entirely as soon as they're resolved. Instead, I expect to see them in the 'Done' column in 'Work' mode, and reflected in the Burndown chart for the sprint. They are not represented in either place.

'first it selects all issues that match..' - match what? when i start a new scrum board i get the 'all issues' filter for my backlog.. but i can't figure out what it is filtering on for 'all issues'.
