Is there a way to set up a Group By view on a project board, that groups the issues according to common values in a shared (string-valued) custom field?
Basically, I want a custom field analogue to the natural "Group by Project" or "Group by Assignee" options that show up when your board view happens to have multiple projects/assignees.

The options for grouping issues in Jira vary depending on the project type. In Next-Gen projects, you're limited to predefined "Group By" options, without the ability to add custom fields.
Besides that, in Classic projects, you can leverage JQL-based swimlanes to group issues by custom field values. Additionally, if you're using Advanced Roadmaps in Jira Cloud, you can group by custom fields.
If you need even more advanced and flexible grouping capabilities, consider exploring Marketplace apps for additional solutions.

I understand that this might not be exactly what you're looking for, but just to put it out there in case it is useful:
If you're open to solutions from the Atlassian Marketplace, you may want to have a look at the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a long list of advanced features, including support for issue grouping by any issue field(s).

I should add that JXL can do much more than the above: From support for configurable issue hierarchies, to sum-ups, conditional formatting, and bulk editing via copy/paste.
