You probably just want to create a new Issue Type Scheme with the issue types you want to use. Then attach the new Issue Type Scheme to the Project(s).

Thanks, but I already created a new issue type schema without those issue type and they reappear in both the issue types list and appear back in the schema despite me deleting them!

So, you created a new Scheme from scratch that did not include those Issue Types. And then system on it's own added those issue types into the new Scheme?
Is the project a Scrum project?

No it's a Kanban project, I literally deleted all the standard stuff that comes shipped with Jira and started from scratch, the system is putting those issue types back by itself!

Hi @Andy Marks may I ask where you're deleting them from? You don't actually need to delete the issue type, you just need to remove it from the project. If you want to remove a specific issue type from your project, you will need to;
1. Navigate to your project
2. Open your project settings
3. Go to Issue Types on the side menu
4. Click on the Actions cog at the top-right of the screen and select Edit issue types
You will then be able to drag the issue type out of the project, so that it will no longer be available for use in the project.

Followed your steps but you can only drag the order not drag them out?

@Andy Marks oh that's odd, for me I just need to drag the issue types from the left column to the right column and click Save.
I would say first thing is to check that the issue type scheme you are editing is the same one as used by the project
