@Tom Lewis Welcome to the Atlassian Community.
Are you on a free instance of the product? If so you will want to do what @Andy Heinzer suggested and "In your case, I still believe the best course of action now is to start a trial of standard or premium so that you can create a support case requesting to rename your site. Unfortunately, I cannot rename your site in the current state because this ability is not available to sites that are only on the free plans.
I am still interested to learn of any other cases where Cloud sign ups are unable to choose a site name. All signup should have the ability to choose their sitename. But since only paid sites have the ability to rename, I cannot see any other way to give your site a new name at this point."
If you are not on a free instance you can raise a support request here: https://support.atlassian.com/contact/
I am not able to choose a site name right out of the gate. This is the first time I've started this to try to experience Atlassian and this is not a good start. Should I create a new trail? If so, where is the link to do that? This is the link I tried to use: https://www.atlassian.com/try/cloud/signup?product=confluence.ondemand,jira-software.ondemand,jira-servicedesk.ondemand,jira-core.ondemand&developer=true

Strange behavior, I went here again:
Then tried to create a new account using my same email address, it told me that I already had an account, then i clicked, "login" and then it stated, "claim your site" then I was able to claim the site by typing in my desired site sub-domain name. Odd behavior. Looks like there is a glitch maybe with a newly created account.

Same problem here. Logged out, logged back in, tried to create a project with a new name and it worked. (Tried many other versions with no luck - trying with a new name, log back in and try with old name, etc.)
