Greetings
I have a board based off this query:
Project in (Finance, "FMS SPA Project", Faculty, Uplift, Architect, "Data Wranglers") and created >= -104w order by project ASC, created DESC
The FMS SPA Project is using sub-tasks and we would like to see those on the board. I have tried Group By and creating swimlanes with queries (didn't work). I have verified my queries and have run out of things to try. Does anyone have any suggestions?

Are you using team-managed projects?
If you are using team-managed projects, you won't be able to see the subtasks on the board the same way we see on company managed projects, only with the Group by feature.

I am using a company-managed board to display a combination of company-owned and team managed projects together. I can see where this might cause Jira some confusion.
I have also thought of something else. I believe the board was created as kanban but my team wanted to have a time limit on the items on the board (which kind of just makes it a sprint board) so we have been creating and starting sprints from this board. I was having a hard time filtering on the sub-tasks in the current sprint but could see that they were indeed assigned to the current sprint. Could it be an issue with the sprint filter?

Not sure why it does not work for you. I was testing on my system and I can see the sub-tasks on the board with both team-managed and company-managed projects.
If you are on a team-managed project, make sure to set GROUP BY: Subtasks.
If you are on a company-managed project, make sure to use GROUP BY: Stories
Also, make sure you do not have a quick-filter on your board that excludes the sub-tasks.
Another solution would be to search for a plugin on Atlassian Markeplace.
If you need this for visualization only and if you consider the idea of using a plugin, a good solution would be to use the Team Wallboard gadget offered by our Great Gadgets plugin. It can display the contents of a board along with the sub-tasks. In these examples, the main tasks/stories are in green color and the sub-tasks are in yellow color. The cards color can be customized.
The gadget also supports swim-lanes by various criteria.
