Trying to map a project from one workflow to a new workflow. Some of the Statuses remains the same in the new workflow, but the " Time In Status" report is skewed . Is there any way to reset the time ?

Most probably, Jira built-in Average Time In Status dashboard gadget is using issue history to calculate the time in status report. That might be the reason of skewed report.
As an alternative you can try Status Time app which is developed for this exact need and provides fine-grained reporting functionalities over status duration. It provides reports on how much time passed in each status, status entry dates and status count.
Once you enter your working calendar into the app, it takes your working schedule into account too. That is, "In Progress" time of an issue opened on Friday at 5 PM and closed on Monday at 9 AM, will be a few hours rather than 3 days. It has various other reports like assignee time, status entry dates, average/sum reports by any field(eg. average in progress time by project, average cycle time by issue creation month). Are you using a specific time in status app from the marketplace? If so, you may want to both name the app and check the vendor's documentation to see what is possible.
If instead you are noting the Jira built-in Average Time In Status dashboard gadget, I suspect that the time will remain unchanged for unchanged statuses, but not for any changed ones. For new status values, the clock would start when the status was created.
