in order to identify and visualize peak capacity utilisation (see illustration), I would like to set up a report using a graph to show when time was booked on a specific task within a project. (see illustration below),

not sure how useful my answer will be, but you've attached the 'big-picture' tag to your question, which others do when they're specifically asking how to model a thing in BigPicture.

So in BigPicture, you've got two modules for such allocation analysis: Resources and Reports.

Figure 1 Resources, note how you can use hours or story points, this is a screenshot made for another person asking, but the module is highly configurable, so you could basically model anything. With BigTemplate added, you can export a view to Excel file and further hone it or even add a graph there.

Figure 2 Reports, you can drill-down charts. Furthermore, with BigPicture Enterprise you can add new charts.

BP is sort of an all-in-one solution, I obviously know nothing about your setup, but the app might be worth considering for just about "any" project/product management. No organization to small or too large :)
