I have been able to create a ticket in zendesk when an issue is created in Jira. I have authorized using API token. But I'm unable to pass the information such as "issue-key", "issue-summary" from Jira to Zendesk. How can I achieve this usecase?

You should be able to use the variables available. Please see this post which should give you an idea of how you would pass these in the payload.
