We are currently going through a migration of our projects from Jira Premise to Jira Cloud. There are some subtle UI/UX differences and I was wondering if anyone knows of a quick guide that explains the differences that we could share with our project usesr?

I have found a few articles about this.

Everything else I found was years older and likely outdated.
There is also this article from Atlassian, but it is not specific to UI differences.
The major difference for the normal user will be the view for Issue Details.
Another major difference will be seen if you start using Team Managed projects in Jira Cloud. The project design in Jira Server/Data Center aligns to the Company Managed projects in Jira Cloud. Team Managed projects are a new project design available only in Cloud, and it is quite different from the Company Managed project experience, as Team Managed projects are meant to stand-alone (separate from other projects) to allow project-specific customization by a project administrator.
