One of our major projects is managed by an external consultant, and we need to grant them access to our JIRA platform. However, we want to ensure that they do not have visibility into our existing projects and activities. Our objective is to create a separate workspace within JIRA exclusively for the external consultant

By creating a new project that would already be a good first step.

Limiting them that they cannot see anything in other projects would come down to how you've set up your permissions so far in the existing projects.

You'll have to go through all the existing permission schemes and make sure that the group/user is not in the browse project permission. Also make sure there is no "public" access
