I just went to create a new project in Jira. Normally I click "Create Project" and then choose the "Bug Tracking" template. Well, when I do that now I see some "bundles" - the Marketing Team bundle and the IT Team bundle. But no Bug Tracking template.
Where do I find that now?
Or should I just copy an existing project to start? Assuming that's something I can do.
I tracked it down, after supposedly creating my own bundle that never showed up anywhere. Sigh...
If you click on Jira under Products you should see the bug tracking template. The new bundles are related to the merging of Jira Software and Jira Work Management.

And yes, basing the project on an existing one is similar to selecting a template. The difference is that you will share the configurations when you base it on an existing project, meaning that if you change the workflow it will affect both projects.

Under "Products"? Not "Projects"? Products appears to be more about general configuration, not selecting a project template.
I found it by clicking Create Project and choosing Software Development in the sidebar. It's in that list.
