When I open a new jira task, always the assignee is Automatic. How can I change that?

The question is simple, when I open a new task/bug, the assignee is set to Automatic instead of Unassigned as it's configured under project settings->project->default assignee which is set to unassigned. 

Any idea how can I change that?

The Assignee is set to Automatic which takes from the Default Assignee - which is Unassigned in your instance so will create the same result as removing Automatic.

You want to remove Automatic from the field so if you have a Default Assignee they aren't assigned at creation? This would defeat the purpose - and having the Default Assignee Unassigned would get you the same affect.

You may not set Assignee field if you don't have assign issue permission for the project, so it may be displaying as Automatic and not allowing you to change it.
