I'd like to know when issues will not show up in the backlog anymore at any time.
Is there some filter on this? "done" status for example?
Reason for my asking is:
I've had this question before, but it wasn't urgent.
So, the above is easily testable and probably doable in any way. Still, I'd like to know when issues can no longer appear on the backlog.
(working in SCRUM project, FYI)

If you're using a Scrum project, I believe that the only time it will stop showing in the Backlog view is when it is "closed" i.e. has the status of the right hand column of the board. This applies whether you add the issue to a sprint and progress it through the workflow or even if you progress it through the workflow whilst still "in the Backlog".
Is there, as far as you know, a field in which this "closed" status is saved? Can I change it manually?

No it is the final status in the workflow.
You could change the workflow to only have 2 states, Backlog and Closed, so that the moment you change the status, it is closed and wouldn't show in the Backlog view.

Ah. So it is "done" status for us.
And if I would change the "done" status to "in progress", would that bring the issue back to my backlog then?

Sorry, different instances of Jira have different status names, so Closed = Done = ...
Yes, if you were to "reopen" an issue, i.e. change it from Done to In Progress, it would again show in the Backlog
