Where do the 'done' tasks go once you edit the JQL query to hide them?

1. Is there a way I can retrieve the 'done' tasks without having to go back and edit the JQL query? 

2. Is there a view or report that I can build to save and show the 'done' tasks?

1. There is no way to change what issues are listed in the JQL query results without changing the JQL query. This is the fundamental behavior of a search/filter function.

2. Yes, at the top of the Search page there is a Save As button. You can save your query as a Filter. You can have as many filters as you want, and you can manage your filters at /secure/ManageFilters.jspa. You can also add filter widgets to Dashboards, so you can see the results of multiple filters on one page.
