You seem to be setting the resolution on the tickets during ticket creation. Check if the resolution field is on the create screen. If so, remove it from there. Resolution should be only set when the work on the issue is finished.
Once the ticket has a resolution, it will appear with a strike-through because JIRA treats them as resolved.

Resolution is not on the create screen; however, it is on the edit screen and I have disabled the default setting for Resolutions.
