I've removed the Slack app and re-added to no avail. I just get this...
When I click create a Jira project, it takes me to a page where I can see the two projects there.
Any help?

Your profile says you're on a cloud deployment but you might have installed the server Jira app in Slack. My version of the screen in your screenshot says 'Jira Cloud app' specifically.
I double checked and the Slack app definitely says Jira Cloud. It even mentions that "This app is only available for Jira Cloud".

/jira manage
and press enter?

It tells me that there aren't any Jira projects connected, then I click connect a project, and it immediately says
The site mysite.atlassian.net doesn't have any Jira projects.
