Will several installed applications affect the operation of the jira?

It depends, I think.

Some Apps will slow down viewing the issues if a lot of extra data has to be loaded from by the app. 

If you will notice this depends on how many apps and how fast the data is loaded. 

If you have apps that are performing actions I.e. in a workflow, it might slow down transition of the issue.
