I would like that when making a status change to X status, it automatically inserts the date or date and time in a custom field with date format that we already have integrated in the ticket. Is this possible? If so, how could I do it?

To confirm, you are looking to auto-populate a date custom field upon transitioning to a specific Status.
Please feel free to clarify if that is not the case.
Looking at Jira out of the box, it seems that it does not provide the feature to edit a date custom field during a transition.
In this case, you may have to look into 3rd party plugins which provides users with additional post-functions or implementing your own custom scripts to meet your requirements.

i read this question very similar to mine but when following the steps it doesn't allow me to select the "Update custom field" function
Could it be because of the jira version?
