I would like to know if it is possible to select a default project while creating a new issue?

No, there is no way that we can set the default project while creating the new issue.
The project will show up on the screen while creating an issue on the basis of recent visited and the Browse project permission that you have.

Thanks for your swift response! Is there a work around to tackle this problem? E.g. a blank field so it is mandatory to manually select a project?

Nope, If you want to give the permission to users that they can select/create an issue in the specific project then you need to do the following things....
1. create group/role and add those users to it.
2. create permission scheme and give the permission to the newly created group/role to Browse project and create issue permission.
3. Apply/associate this permission scheme for the project so that only the users belong to this group/role they can have the permission to see/select the project while creating a new issue.
