version issues

im learning jira newely i have 8.20 version videos so currently version is 9.1 how can i change it to 8.20 version to practice with my videos please help me for this 0096sathya@gmail.com

For your current query, the roll back is available in Jira Server and I'm unsure of the same in Cloud edition.

But please be informed, Jira software is constantly evolving with new features or fixing bugs in the versions. So, you will not see major changes that you think will effect your learning.
