what's use of "Share settings with an existing project" checkbox in new project creation in JIRA? is it something we can use existing project settings to the new project? or settings that we do in current project will be reflected/shared to the existing project?

Yes, that's the idea. When you want to have N projects all using the same set of schemes. We only create projects using that setting
