When pulling reports we are unable to get more than 1000 results. Is there a way to increase this?

Do you really not get more than 1,000 back? Or does it just say 1,000+ returned?
There is a couple of ways to see the total. One is to save the filter and use it in a dashboard gadget that would display the total number.
Another is to install the free Jira to Excel (or Googlesheets) add-on and then open the query results in that app to see the total number of rows.
The max amount I am able to get is 1000. I did find a workaround just now through the community however so I am going to try it out!

@John Funk just tagging you for the above too. I am still trying to increase the number of rows/data being pulled as my data comes out with 1000+ results, but the export function only pulls a max of 1000 rows. I am exporting current fields shown from a filter, and then copying that data into a google sheet. I tried looking up the Jira to Excel add on you mention above, but it doesn't have any installation instructions. Is there a specific app you can point me to? Or other instructions? I need this data to copy into excel/google sheet essentially - not a dashboard widget.

If you're talking about the maximum number of exportable issues from a query, this value can be updated in Data Center (not sure about Cloud).
To update the value, go to System > General Configuration and click the 'Advanced Settings' button in the upper right hand corner.
From there, find the key with the following name and change the Value to whatever amount you want. Note that I can't confirm how this will impact your system if you try to dramatically increase the value (I set it to 3k at one point, but then reverted after I was done).
jira.search.views.max.limit
Below is some help text around this key:
This number sets the absolute limit on the number of issues that can be exported from search results. Users trying to request more get a 403 (Forbidden) HTTP error code. To disable, set to '-1'. After changing it, update the value of 'jira.search.views.default.max' to a value that is lower than or equal to this one.
