Am looking to make components \ products mandatory in JSD. However, when I edit the request type, required field and change from NO to YES it will not save. Any workaround for this?

Usually when you can't save a field as required on Jira Service Desk is due to the request type being associated with the email channel.
Please, check if the request type that you need to add these fields has the label "Email". If so, you can't add these fields as required because for customers to open tickets through email, only Summary and Description must be required.
All other request types which customers use the customer portal to open tickets, you will be able to add many required fields.
