Restricting when tickets can be edited

I am looking for a way to restrict when an issue can be edited, e.g.

Open -> In Progress -> Testing -> Closed

I would like the ticket to be editable until it gets to testing. Once in a testing and onwards state, I do not want the ticket to be editable at all.

Is this possible? I couldn't see how to do it using Permissions.

Currently using JIRA 4.4.5

Add the workflow step property

jira.issue.editable = false

Check out the second one if you want to make only certain users able to edit during the steps. :)
