1. Is it possible to customize the project roadmaps?
The Roadmap on Jira Software projects is basic. The features and customizations available are listed on the documentation below:
If there is specific customization you need, please share with us more details, so we can check if it's possible or we can create a suggestion.
2. Is it possible to configure your own hierarchy as is the case with "Epic -Task-Subtask" in existing project templates (Scrum, Kanban roadmaps)?
Currently, the roadmap only shows Epic and its child issues. There is a feature request suggesting the option to show sub-tasks as well:

The date range is still no available for child issues. There is also a feature request suggesting this option:

The creation of project templates is currently not supported. It’s possible to create projects with shared configurations, but custom templates are not possible.
