I'm having strange behavior - I'm trying to hide fields from EDIT view on 2 JIRA projects.
How I did that? I just removed fields from EDIT view on the screen settings, that is linked with EDIT action and then they are present on CREATE and VIEW actions.
On one JIRA project it works perfectly, on second JIRA project all the fields removed from EDIT view are gone when I preview any issue. When I click then Configure icon and want to check what happened - they are there...
Is there any other dependency that affects that?

The case you describe is difficult to assess without insight into the details of your configuration. But (assuming your projects are company-managed) screens are associated with projects through a set of screen schemes;
Trying to avoid over-complicating, you can basically perform 3 different operations on an issue: create / view / edit. Each operation can be configured to uses its own separate screen.
It is very well possible that one of your projects is configured to use 2 or 3 different screens for these operations, while another project uses that same screen for all operations. If the edit screen is configured for all operations in the other project, that may have that effect.
Something else that may be happening: to make issues more readable, Jira has the option to hide certain fields when they don't contain any data (they are in the hide when empty section on the issue layout). That may also something to look into.
