Do you actually mean “creating” a custom field? I expect you mean “populate” a custom field. Regardless, the answer to bot is no. There are addons that will allow you to do this however. I recommend check the Marketplace to find the one that works best for you. For example in-mail-handler-pro (I have no experience with this).
