I would like to set the due when the ticket is approved .Initially, due date is set when the ticket is created. After discussion and ticket is approved by lead , now the ticket is ready to start work status. I want to set the due date from here to track the status.

You can set a DueDate by adding the field in the transition and make sure Approver has Schedule Issue Permission. You could also use automation for JIRA to automatically set a DueDate.
