Setting up a project in JIRA

I am interested in setting up a project in JIRA. I am evaluating the product for my team and need to setup a project to do that. Any assistance you could give would be most appreciated.

I would start with our documentation at Configuring a Project.  This has sections that go over creating a project, configuring a board for the project, configuring project permissions, defining workflows, screens, custom fields and more.
