Just wanted some advice, i have a requirement in a project which requires to create multiple sub-task issue types
Eg.
Issue type (Story) --> Sub-task (sub-task)
Issue type (Test case) --> Sub-task (scenario)
My doubt is that, should we have multiple sub-tasks issue type added in a project ?. As my JIRA administrator mentioned it is not recommended practice by Atlassian to do the same.

As I see it, it brings redundancy as you can determine which type of subtask by looking at the parent and you tend to avoid that. However it can come handy if you need to distinguish them at a dashboard level for example, as you can use a different issue type icon.
