Before I do this, I want to make sure I don't accidentally screw reporting up.
We have had tickets move from one Sprint to another, for instance, move from Sprint 10 into Sprint 11, or sometimes, it didn't get done in 10, but was put into the backlog.
Would it hurt reporting or screw anything else up, if I Bulk removed the old sprint info from the Sprint field?
To be clear, I have a ticket that has survived through 2 sprints, and didn't get to "Done"

Sprint Field = Sprint 9, Sprint 10
If I change the Sprint Field to be just Sprint 10, would it screw with the reporting in Sprint 9, if 9 has already been closed?
It'll impact your historical sprint reports if you are using them. But otherwise, it wont impact anything else.
Why do you want them removed?
