I am trying to add start and projected finished dates to stories and tasks on my board. I have multiple projects going on my board with different projected completion dates. I need to be able to track these in my reports. How do I add them?

It depends on what you want to do with the dates. To see more dates in Story type issues, you can create custom fields and add them to the relevant screens. If you want, for example, that some Automation sets the dates based on some other action / relationship / dependency, this is also possible but you would need to define the relationships and triggers for this.
