On my Kanban, I have columns for "To Do", "In Progress", "In Review", and "Done", with those statuses mapped to the appropriate columns. I have additional statuses mapped to "Done" ("Ready for Test" and "In Testing"). My board is configured to show swimlanes by epics.
When moving my items to the "Done" column with a "Done" status, they disappear off my Kanban board. The items show up in the column when marked "Ready for Test" or "In Testing".
I've tried both mapping and unmapping "Done" as a status to that column. If I map "Done" as a status to that column, I see previous epics and stories that we've marked as complete, so the metrics provided to me are much higher and not indicative of my current work period.
How can I see my current epics that are in work, as well as the stories within them that I've marked "Done"?

What type of project does this concern? Get that information by clicking the ... button next to the project name in the panel on the left.
EDIT: Disregard the above - not relevant to data center.
There are a couple of things to check.
Items may be removed from the rightmost column of a Kanban board due to the setting to "hide completed items" which is available in some Kanban boards.
In Kanban boards created in Company Managed Software projects or from Saved filters there is a Board Sub-filter option for the board that can cause items to be hidden from view.
EDIT: The image below is from Jira Cloud, but there is a similar option available in Jira Data Center also in Software project Kanban boards.
Apologies! My reply was Cloud-centric and I just noticed that your post tags say you are using Data Center. So my first ask about getting project type information and my reference to "Company Managed" projects are not relevant.
Get your project type information from the View All Projects list available from the Projects menu.
My comment about the Board sub-filter still applies. My screen image is from Jira Cloud, but there is a similar option in Data Center in the board settings/configuration for a Kanban board.

Thanks, Trudy! My project type is Software; my team is utilizing a Kanban board rather than a scrum board and NOT mapping our tasks to sprints like the other teams because our workflows are different.
The two sub-filters shown in your screenshot above are on my board. I've played around with the sub-filters to see if adding/removing other things can change my view and I have not been successful yet.
Do you have any other advice?

Have you confirmed that you don't have any quick filters activated?
Can you share a screen image of the Setting/Configuration for your board?
Can you share a screen image of the Column Mapping settings for your board?
Can you share a screen of the details of an issue that stopped being shown on the board when you transitioned it to Done? You can obscure data like summary and description and user names. I'm particularly interested in the Status, the issue type, the Create/Updated/Resolved timestamps, and the Fix Versions field at this point.
