Task and bug tracking workflows

Hello! I am new to JIRA as administrator (but not user). I'm trying to set up a JIRA instance for a new game that is being developed at the company I work, The team will be around 15 people.

We want to use our JIRA for both bug tracking and task management. What should I be considering overall in terms of customization to make that work?

I've already encountered an issue where I set up workflows for bug tracking and also development/task management. I went to add a "scheme" and it looks like it's going to remove my other workflow... maybe I'm just confused between schemes/workflows, but if there are any other suggestions generally would be great. Thanks in advance!

No, I have two separate workflows that I want to use on the same project. I was using the workflow schemes and following this page when it went to erase the workflow.

Perhaps I'm going about this the wrong way?

It's hard to say based on what you have told us so far...

Nothing should be erased simply by adding new things.  A workflow scheme is the way you associate workflows with different issue types.  You can create new schemes and workflows and the old ones will still be there, but they may end up being inactive.  The only thing I can think of that may look like it's being 'erased' is when you replace a workflow in a workflow scheme, it will give a warning that the old workflow is going to be removed from the scheme.

Can you give us more specifics about messages you are seeing?  Also, you may want to spend some time reading https://confluence.atlassian.com/jirasoftwarecloud/jira-software-documentation-764477791.html or watching some videos to come up to speed.  I wish I had links to free videos, but I took the courses on Lynda so I'm not sure what else is out there.

I'm sorry that I have been unclear and come across as blunt - I really appreciate the help! :D 

Here are some screenshots of what I am trying to do.

I find the documentation a bit confusing and it takes me down a rabbit hole to do something specific before I even know if that is what I want/need to accomplish.

I believe my issue is that I would like to use the "bugs and issues" workflow at the same time as the "development" workflow that I have created, but it seems that I need to associate these with a scheme to accomplish this. When trying to add a workflow to a scheme, it seems I can only add one. If I add another, it replaces the existing workflow in the workflow scheme with the other workflow, but I want both.

If not, I'd just like some way to be able to use JIRA for both task management and bug tracking with the team. :)
