Is there a way where I can mark the kind of "Activity" I does against which I Log my "time Spent" inside my ticket.
Eg: In a ticket, different team members act and each of them log there time spent. Although there is provision for loging the "time spent" this need to be tagged against a "Activity" as well like testing, documentation etc. How to configure this option?

By default, you can only add it as a worklog description. But, it looks like you are looking to categorize the worklogs and you will need plugins like Tempo to do this.
Plugins or Apps like Tempo allows you to create custom fields for worklogs and tag them when the work is logged. You can also report based on each category/field.
