We currently have 12 projects. We are using Company-Managed software as the type of project. As this is what the business requests us to use. We see that the projects have a Timeline/Ghant chart but only allows you to see certain ticket types. (To do, In Progress, & Done). How do I get the timeline view to show the workflow/status that are created in that project.
If you don't mind using third-party apps for this, our tool ActivityTimeline is built to work with all of your Jira projects, so it should have no trouble recognizing your custom statuses. The key is to just use the right filters and settings to make them visible.
Here's a breakdown of how to get your custom statuses to appear:
Look for the "Status" filter: The easiest way to get started is by using the "Status multi-select drop-down list" to filter your tasks. You'll find it right in ActivityTimeline. Just click on it and select all the statuses you want to see, including the custom ones you created in your Company-Managed projects.
Check out the Timeline Panel Settings: In ActivityTimeline's Configurations, there's a section called "Timeline Panel Settings." You can dig around in there to see how different statuses are displayed. You might be able to change how they look, too.
Use the Aggregation Mode: If you want a quick, high-level view, try using the "Aggregation Mode" and group your data by "Issue Status." This will give you a birds-eye view of how your projects are distributed across all of your custom statuses.

As mentions above, it's all about the subscription you have in Jira. The Basic timeline includes the epic level only. You can trial Jira Plans which is part of Premium. It provides more flexibility.
Otherwise there are multiple options on Atlassian Marketplace. Search for roadmap/timeline/Gantt. You will see great and cost-efficient solutions. One of them is Planyway for Jira. It lets you view the timeline grouped by users, teams, epics, projects, etc. Even if you don't use Epics, all other work items will be displayed.

What is the difference between this and the PLANS section in JIRA which looks like you can create different plans either across all project or just one project.

So Ghant charts are only seen when an EPIC is created. And this will display on the timeline.

Can you provide a screen image of what you are viewing, pointing out where you are seeing the status information?
Are you looking at the Basic Timeline available as a tab (similar to the Board, Summary, and List tabs) or are you looking at the Timeline component of a Plan (from the Plans menu)?
Are you looking at a progress bar for a parent item, like an Epic? Or are you looking at the current status of an individual issue?
Without that information, I presume that what are seeing is the Status Category information shown in a progress bar.
Example
Each Status value belongs to a Status Category. The Status Categories are To Do, In Progress, and Done, and are color-coded grey, blue, and green respectively. These categories are hard coded and not customizable.

That is the "basic" Timeline feature. That will show only Epics and their child items. Items that don't have a parent Epic will not be displayed in that view. You would need to use the Plans feature to create a plan to see all items regardless of their parentage. Or, you would need to add Epics to your project and assign each item to be a child of an Epic.
In the basic Timeline view you have shared notice that the filter button says "Status category". With that filter you will be limited to filtering based on the Status Categories to which the Status values in your workflow belong. All the Status values that show as a gray lozenge are members of the To Do category, while blue-lozenge Statuses are members of the In Progress category, and green-lozenge statuses are members of the Done category.

I am assuming there are other levels that can be had. What level would be needed to have Ghant charts/Timeline view within the projects?

There is not other timeline view natively available "within" the project. That Timeline tab offers only basic timeline functionality.
For more features in a timeline view you could create a Plan through the Plans menu, with the source being the one project of interest. That Plan would be available through the Plans menu, or you could use the Shortcuts feature to add a link to it from the Shortcuts tab available within the project.
