Is it possible to track the time between one transition and another? I'll give you an example:
1. Now a task is in state A
2. at 3 pm I place it in state B
3. at 5pm I place it in state C
I want to track how much time passed between state C and state B (2 hours).

The issue history records all changes, so you can see the time elapsed in there.
However, I think you might be asking for a more generalised "report on time in status for a load of issues". Jira does not have anything built-in for that beyond "time it took to resolve the issue(s)" which does not differentiate between the to-do and in-progress type status, it only looks at the issue raised and issue resolved times.
Have a look in the marketplace for the apps that report on "time in status" - most of them give you excellent overview reports and allow you to drill down into the detail really easily.

For your needs I would recommend trying out our another add-on Time Between Statuses. The add-on is specifically designed to calculate dates between two Jira columns.
You can also set up highlights of values that exceed the permissible level, and in this case, you can receive issue and email notifications.

Another option can be Time in Status add-on.
It generates 7 types of status reports, including a Time in Status report that shows how long an issue has been spent in each status (To do, In progress, On hold, Done, etc). You can choose the time format type that will be represented on the grid.

Duration Between Statuses report type which shows the duration between two specific statuses. This report type also allows the user to exclude the times for "pause" statuses.

There is no built-in solution for time in status info in Jira. If you prefer using a marketplace app, you can try Status Time Reports app developed by our team. It mainly provides reports and gadgets based on how much time passed in each status.
Here is the online demo link, you can see it in action and try without installing the app. For your case, you can have a look at Time in Status for Each Issue report (how much time passed between state C and state B is in fact the time passed in state B).

As Nic suggested, this is an area where many Jira users rely on apps from the Atlassian Marketplace to fulfil their status time reporting needs.
If a Marketplace app is an option for you, I think you might like the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields - including all JSM-specific fields - much like you’d do in e.g. Excel or Google Sheets. It also comes with a long list of so-called history columns that aren’t natively available, including time in [status], time between [status] and [status], and many, many more.

As you can see above, you can easily sort and filter by your history columns, and also use them across JXL's advanced features, such as support for (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting.
