Is there anywhere I can go for in depth training of JIRA products?

Have a look at https://www.atlassian.com/university - there's training and certification stuff there.

A lot of it is aided by the inclusion of partners - I've helped out on several training courses (and will be again in a couple of weeks), delivered a couple, helped write some, and my colleauges (who are far better trainers than I am) have done a lot more.
