We've built a product using JIRA software project (cloud) for our client. Is there a way to transfer that project, and all its history, to our client's own JIRA organization?

In order to better understand your scenario, please provide us with the following information:
- Is there more than one project on your source cloud instance?
- Is there more than one project on your target cloud instance?
If the answer for those questions is yes, I'm afraid JIRA Cloud does not have an inbuilt system to easily migrate single projects, as you can see in the feature request below:
However, you can still migrate all the issues from that project (with attachments) to other instance by using CSV export/import:
Performing the steps above, they will need to manually create a project and set permission as they want, and then import the issues to it.
Also, feel free to watch and vote on the feature request to increase its priority and be notified of any updates.

@Petter Gonçalves at this moment it's the only project on our source cloud instance, and we would ask the client to put up their own cloud instance to transfer it to.
So, the answer to those questions would be 'no'. How does this change the answer?

If there are no data in the target instance to be spare or any extra projects on the source instance that should not be migrated, you can simply migrate your entire JIRA data to their site, by following the steps in the documentation below:
Once it's performed, they can manage their application access and add/remove the users that should be accessing their site.
