I don't know if I'm asking in the right forum. when posting a question I'm given the choice of:
* Jira Service Management (Cloud)
* Jira Software (Cloud)
I selected the second, not knowing what either of these are. I use Jira to track issues
Now my question: I need to reorganise my issues. I want to convert some of the issues into "sub-tasks" of other issues but I don't find a way to do it. I've read here:

that sub-tasks have to be enabled and for my project they are. I've also read here:

but when I open my issue there is no "More" link anywhere. I do find an ellipsis at the top right of the window that shows a menu when I click it but the menu does not show a "Convert to issue" item
my issue does not have any sub-tasks of its own (I've read elsewhere that issues with sub-tasks cannot be converted to a sub-task) so I don't know why I cannot do this
I don't know why things have to be so difficult. please help.

The documentation you shared is related to Jira Server/Data Center and not Jira Cloud.
Make sure to select Cloud on the top-right corner of the page when looking for documentation, as Jira Server has some differences.

Also, I think you are working in a Jira Software project, based on what you described. Jira Service Management has some additional functionality specific for service desk projects. In Service Management you can define certain request types that other users "customers" can use to create requests. The team can organize the incoming requests in queues, define SLAs, etc.

ok. that's one step forward. I hadn't realised that the icon and the text are separate links. however, when I click on the icon a menu shows Task/Story/Bug. no sub-task

as you can see, I have (I believe) sub-tasks enabled. so what else do I need to do to have subtasks show up on the little menu?

I know this may come too late, but hopefully it might help somebody else.
I was able to convert a Story to a Subtask by selecting "Move" from the issues action menu.
From there you will be able to change the issue to a Subtask and assign it a parent issue.
