I was able to edit the field and update due date by yesterday. Then one of my colleague made some changes which I am unaware of and cant undo those changes. After that today, I am unable to edit this field. Need field on how to fix it

Without knowing the changes made by your colleague we can't tell you what is required to fix the issue.
Why can't your colleague undo their changes?
Is this for a Team Managed project or a Company Managed project?
Can you still edit other fields?
Is the field still visible?
Can anybody else edit the Due Date field?
There is a Schedule Issue permission that you must have in the project in order to edit the Due Date field. That would be one thing to check.
It is company managed. He is now on vacations and hence can't ask him. But how can we fix it, basically I can see the fields but it is uneditable.

If the issue is that you don't have the Schedule Issue permission:
The fix depends on how that permission is allocated to users in the Permission Scheme associated with the project. If the permission has been granted to Project Roles, then a Project Administrator for that project can assign you to the role to give you that permission. Otherwise it may take a full Jira Administrator to modify the Permission Scheme.
If you are a Site Admin, as you have tagged your post, you should have sufficient access to either make the changes or grant yourself Jira Administrator access and then have sufficient access to make the changes.
