Updating values without changing Updated date

Hi,

Is there a possibility to update the value for field Priority (or hide some options from list) without changing Updated date?

We have a situation where we have done migration from Jira Server to Cloud, that was already in use for a few years. Now, users are opening issues with priority for example "Critical (migrated)" and we would like to remove those values from that field, or if we have to delete it, to select new value without changing updated date.

No. The whole point of the updated field is that it shows you when the issue was last amended.
