Hey there,
as custum field I want to have a drop down with various entries.
As this list contains quite some entries, should be sorted alphabetical and will get new entries once in a while, I want to uplaod all options in one list to be translated in one option per line item of the list. Is this possible or do I always have to create every single option and change according to an alphabetical order manually ?

Options in a custom field (for company managed projects) are managed by a Jira administrator, centrally. Options must be added manually, but there is a one click link available to sort the items in the list alphabetically, as you can see in this example:
Team managed projects don't have that one click sorting option, though. Items can be rearranged via drag and drop there.

To get the customfield options sorted alphabetically, you have an option under the customfield options page. When you add some new values to your customfield, you can simply click on this option and the values will be sorted in alphabetical order.
Issues >> Customfields >> Click on the three dots across the customfield that you would like to edit >> Configure >> Edit options.

you could also use the third party app External Data for Jira Fields in case you have many and or changing options.
Using a file as a data source in combination with Field Options Sync will sync all values of a file as options to a custom field of your choice.
Depending on your use case it might be overkill, but worth mentioning I think.
