I am looking to track User activity.
Is there a way to see who has logged in and what they have done?
For system changes like logins or new user creation, check the Jira Audit log or User management.

I am trying to capture information like who actually opened issues and did work on them. I have many users so the audit log isn't enough.
I was looking at Issue History for Jira, can I get this kind of information from the add on?
Example: Maggie logged in and opened a board, moved some issues etc.

Those two examples you provided are natively supported within Jira.
Jira has a really powerful search function, where you can filter results for changes within a time range, changes against a project, and more. Here's Atlassian's documentation on their JQL filter language, which includes a lot of functions you may find useful.

@maggie_pople With Issue History for Jira, you can get only issues-related updates.
Example: Maggie changed the summary, description, statuses, added/removed comments, or moved issues from one project to another, but not logged in or opened a board.

Unfortunately, you can't track user activity natively, but there are Marketplace apps that track user activity.

If you are open to using apps you can use Issue History Dashboard for Jira an app provided by our company.
You can filter by field Updated By and obtain your result in a sortable paginated table
If you need you can export the search result in CSV format for further analysis.

Jira has some level of activity monitoring built in, but it's likely not as advanced as you're looking for.
On Cloud, you are able to view an "Activity Feed" as a gadget on a dashboard. This will show you a rolling list of actions taken across your instance, and can be filtered down to show specific projects.
If there is a specific person you're interested in viewing information about, you can find their "Profile" in the Teams section of Jira, where recent activity will be displayed. This will show a list of recent created, edited, or commented items with in the past 90 days.
