How can I add more than one 'notes' column to a JIRA structure, that is, more than one column in which the user can insert some kind of information.

You are working in Jira server, correct?
If so, you can add as many Notes columns as you would like by clicking on the plus in the top right hand corner of your structure.
You can also give them different names by hovering over the column heading and clicking on the down arrow to the right of the column name.

I don't understand, actually this is what I thought, but once I have added a note column, when I try to add a second one, what happens is that this second one is a duplicate of the first one. In fact they keep the same information, and when I change one both get updated.

Thanks for bringing this to my attention. This was my mistake as I am relatively new and was unaware of this issue. There is an existing enhancement request and you can send a note to structure@almworks.com if you’d like to be notified when it’s released. We just released Structure 9.0 and it is now possible to add multiple Notes column with different values. Please feel free to try ti and check out our Wiki for more details.
