I am finding it challenging to see that user story status is not changing from NEW > In Progress when any underlying sub-task status changed to in progress.
Is there any way we can see that happening ?
Any change that is happening to an issue should be noted in the History for that issue.
Are you saying that the change of the parent story status is not happening when you expect it to happen?
Do you have some sort of automation rule or workflow post function that is supposed to execute that change for you?
I shall give a simple example here.
Story 1 is created with requirements and acceptance criteria and default status is NEW. Now for simplicity i breakdown the acceptance criteria or requirements into dev & qa sub-task owned by scrum team members all with NEW status.
Now a dev member starts working on a particular sub-task which means it's system will be IN PROGRESS
Ideally when the sub-task is advanced from new to in progress, the development of story has started which means state should be automatically changed to IN PROGRESS and in my environment it's not happen. I believe it is Jira functionality issue or its as designed with some rational behind it.
With current state of workflow my team is extremely unhappy since the story status never moves unless moved manually from New to In progress
Essentially if any state change happens it will get reflected in history for sure

In order for the parent story status to be updated automatically you will have to build that automation. Jira doesn't inherently do that.
I haven't worked with Jira Server for several years, so I'm not up to date on its built-in capabilities for automating such things. It might be possible that the version you are using has the capability to change a parent story status during the workflow transition fo the sub-task.
Are there other automatic transitions you want/need for the parent story based on the sub-tasks?
What version of Jira Server are you using?
