Is it possible (and how) to define "hidden field" in a software project ? The goal would be to store automatically information in these field (using automation) but I don't want user modification on them
These information will be used later on for display (in a Confluence page or Jira Dashboard)

Yes, just don't include the filed on any screen. Then update the field using an automation rule. Or you can include if on the Create screen if you like and then either override that with the value you want or not update it if there is a value in it when the automation rule runs.

I tried to do that in a team managed project but I can't find my new field in the Jira Automation. Do you know of this is possible ?

If you go to create custom fields, under advanced, theres this "Text Field (read only)" which cannot be manually updated by users.
Whether it is "hidden" or not depends on if you have it on any screen/page.
