You can change this but it is a system setting, so it will be applied to all projects where Subtasks are used.
If this is okay, go to the System settings, then, under General configuration, Advanced Settings
Here you can specify the field headings you want to appear in the Subtasks list

Hi @Fabio Costa , apologies for the delayed response.
I just tested this and it also doesn't work for me. This has been reported to Atlassian, [JRACLOUD-70206] Configuring the info to show when viewing sub-tasks or linked issues in a table does not reflect in the new issue view - Create and track feature requests for Atlassian products. You can vote on it here.
I know that this works in server, which is why I suggested it. I think to get a view of the issues with their due dates, you will have to write a filter query and use a dashboard gadget as a workaround or see if there is an app to help.
